I Made My Own Birthday Cake!: The Apple/Strawberry/Pear Kefir Cake

My birthday was a few weeks ago and I made my own cake. Yeah, yeah, I know, to some people it isn’t a big deal, but it was my first time and I’m pretty happy about it. Save for the yogurt topping, there was zero added sugar in the cake and was completely sweetened with fruit (apples, pears, strawberries and unsweetened applesauce and apple butter). Everyone I know told me that I shouldn’t have done that, that as the birthday girl, I should have been “catered to.” But really, I didn’t want anything too heavy/too much starch or sugar. So I made something on my own. It was the only thing to do.

So how easy is it? It’s not like I made the entire recipe up – it was based on a kefir muffin recipe I found on Pinterest. Of course, I made a few changes/additions, so my recipe was as follows:

  • 1 cup banana flour
  • 1 cup almond flour
  • 1 cup sweet potato flour
  • 2 cups kefir (I used a 1% milk kefir, but any kind would work)
  • 2 tsp baking soda
  • 1/2 tsp baking powder
  • 4 egg whites
  • 1/4 scant cup of an apple butter and applesauce mix (I don’t know how much of each I used!) –> this was used in place of maple syrup
  • A drizzle of avocado oil (can use butter, canola, coconut, etc…)
  • 1 chopped apple and 1 chopped pear (left the peel on)
  • Added some strawberries
  • Mixed the batter thoroughly and then placed it in a cake pan. Topped it up with cacao nibs
  • Bake in the oven at 375 for about an hour and let cool

Since I didn’t make any frosting, I decided to top each slice with two different types of yogurts (and yes, both were flavoured/sweetened – not something I normally get).

This cake is also great for Rosh Hashanah and I think I’ll be making it as a repeat. I might use different types of flour.
